Week of Oct 1 Menu

One of the complaints I most often hear is that you don’t know what to cook, especially when it comes to something healthy. Well, I am here to help you! I have often been in the same position, staring into the freezer at 5:00 hoping something will pop out at me for our family to eat. I have learned that you must plan ahead. Before grocery shopping make a menu; by doing so you will know exactly what groceries to buy and every day you will have a list of meals to choose from before cooking.

I plan to share with you my weekly menu, plus the links to the recipes, in hopes that this will help you to plan your own menu. I try to keep our meals simple and healthy, so most of the recipes will be low calorie and easy to make.

 

Breakfasts:

Oatmeal Banana Muffins

Peanut Butter Banana Oatmeal Squares

Lunches:

Southwest Chopped Salad (minus the chips)

Baked Sweet Potato stuffed with veggies or nuts

Suppers:

Southwest Stuffed Peppers

Drumsticks, Parmesan Asparagus, Mashed Potatoes

Fish Tacos

Fresh Shrimp Pasta

Chicken Pot Pie Soup

Snacks:

Frozen Nutty Banana Nibblers

Smoothies
